Case Study
Bringing menu pricing and cost control under one roof at a Munnar hotel restaurant. Told in the property's own words, with the modules and the operating model behind it.
This story is based on the testimonial the property gave Exceed HMS. Exceed does not publish revenue, occupancy or other performance figures for any client without written consent, so none appear here.
Munnar's hotels live on a short, intense season and a long tail of quiet weeks. In a market like that the restaurant is not a side business; it is where a hotel's profit is made or lost, and the difference is usually in the pricing of the menu against the real cost of what goes on the plate.
The implementer's account is specific about the gap: cost management. A restaurant that prices dishes by instinct, buys stock without a recipe behind it and reconciles at the end of the month cannot tell which items carry the business and which quietly drain it. That was the problem the property set out to fix.
What Exceed Put in PlaceLumino implemented Exceed's restaurant management software with the pricing and costing module at the centre. Each menu item carries a recipe with ingredient quantities, so stock depletes as dishes sell and the theoretical cost of every plate is known before the price is set. Menu prices are then managed against those costs, with GST applied at the outlet's rate on every bill.
The transition was handled on site, and the implementer highlights the user-friendly interface as the reason the change went smoothly for the restaurant's team. The same POS runs the floor, routes KOTs to the kitchen and produces the daily sales report, so the pricing discipline is not a separate spreadsheet exercise but part of the normal day.
I recently implemented Exceed HMS for my restaurant, and the pricing module has been a huge hit. It streamlined our cost management and improved profitability. The user-friendly interface made the transition smooth, and the client is thrilled with the results.
Lumino Hotels, Munnar, KeralaIn the words of the person who implemented it, the pricing module "streamlined our cost management and improved profitability", and "the client is thrilled with the results". The specific figures behind that statement belong to the property and are not published here.
What the case illustrates for other hill-station and resort hotels is a general truth: when recipe costs, stock and menu prices live in the same system as the bill, the restaurant stops being a mystery at month end. Exceed's restaurant software runs equally well as a standalone outlet system or as an outlet inside the hotel PMS, posting to the guest folio.

About this implementation
The testimonial describes the restaurant implementation, with the pricing and costing module as the centrepiece. Exceed's restaurant software runs as a standalone outlet system and can later connect to the hotel PMS so that restaurant charges post to guest folios.
It holds a recipe for every menu item, calculates the theoretical cost of each dish from ingredient prices, depletes stock as dishes sell, and lets the manager set and review menu prices against those costs. Variance reports compare theoretical and actual consumption.
